When
buying saffron look for the three properties
1) Once
you open the container smell the saffron. The aroma will be strong. This is
whata good quality saffron smells like.
2)
Saffron is the stigma of the flower and so it should be long and tapering in
length flattened at one end.
3)
Saffron when put in hot milk or water should release colour slowly. If it
releases colour as soon as it is dropped in milk like ink spreads in water, it
shows that it is adulterated with food colour. Wait for 5 seconds to see the
colour around the strand of saffron.
